Michael Szarata

founding chef & f&b consultant

michael has a master degree in culinary art, (1984 in munich, germany) and worked in the capacity of executive chef in various restaurants and hotels in europe and the gulf in the 80s, including the hyatt belgrade and the hyatt Dubai, before moving to the east. two restaurants, the berlin’s steinberger hotel and ente vom lehel, wiesbaden, germany received a michelin star each when michael was their executive chef.

he was the executive chef in the bali hyatt from 1991 to 1994 before becoming director of food and beverage at waterbom until the end of 1996 when he founded m&m catering.

michael is passionate about the f&b industry, especially in employing new ideas in restaurant design and management.

Ekowati Brantas Kusuma (emma)

executive catering manager

an english major with a background in client supplier liason in the shipping industry. emma’s passion for excellence and positive attitude has made her a pillar of strength and accountability for the team since she joined m&m in 2001.

emma handles every aspect of the m&m catering accounts from the first point of contact, delivery to post production.

her gift of assessing a client’s needs and matching them with the right balance of food couture and service style ensures operations run smoothly and to plan.

Rais Hakiem Anwar

executive chef & training consultant

chef rais started his career at a young age (20), through an internship at the gran melia hotel in jakarta. after which, he worked in various international kitchens (asian, american, middle eastern cuisine, including m&m's cafe warung keramic at jenggala in bali) to learn as much as he could about the various flavours, techniques and culinary styles the world has to offer. from this experience, rais set up his own restaurant called the ketumbar. a successful small restaurant in jalan yado III in radio dalam (jakarta). when the opportunity came up to return to m&m as executive chef, rais moved back to bali with his young family in 2020 to embark on a new adventure. today, chef rais takes charge of the 8 kitchens within waterbom bali, leads the team in the food couture catering including the presidential dinner for the g20 in bali. his diverse experience, passion for cooking, humility and enthusiastic team spirit makes him a dynamic motivator and inspiration for the m&m team. chef rais also shares his skills and knowledge by training up teams and creating menus for our consultancy clients.

Nattamon Paisarnsuwan (LOOKYEE)

r&d controller & food scientist chef

lookyee, with a bachelor's degree in agribusiness and food science, worked as an r&d supervisor at nippon flour mills in thailand for 10 years before moving into entrepreneurship. she founded and ran greedy beast bakery for six years. in 2021, she switched to her own bakery studio, where she still works part-time. in 2023, with almost 20 years of experience in the foodscience field, she joined m&m as an f&b controller. by identifying areas for improvement and implementing innovative solutions, lookyee's work helps ensure the quality of the food and experience of m&m's guests. lookyee's contributions to the entire team take the quality of m&m's offerings to the next level and contribute to the company's overall success and growth. lookyee's expertise is a great and valuable addition within the entire team at m&m.

Tarini GRAHAM

sustainable concept, culture & training consultant

born into a conservation family with a restaurant business in thailand. tarini has worked as a creative and marketing director, concept designer and trainer with over 30 years experience in entertainment, hospitality, culture and education. a stage scholar from the royal central school of speech and drama, london (1993). tarini's career like her heritage has been nourished by asia, europe, africa and north-america. this multiple perspective and cultural diversity has informed and nurtured her to become a creative economy specialist. 

as a consultant for sustainable boutique businesses tarini has worked with world leading brands and industry pioneers. tarini's signature approach is to use story telling to align culinary, community and cultural identity with local nature. from a weekend beach market at the tandjung sari hotel to a wondersalon at wonderfruit festival, food medicine chef's tables in a bangkok shophouse and movie-theatre pageants at venice biennale and westminster abbey.

tarini is known for creating innovative and transformative concepts that fuse local artisan knowledge and international expertise.

LAUDAPHINA MANGGO (PHINA)

logistics coordinator & company administrator

phina kicked off her career as a freelancer for m&m and has now become an invaluable asset to the company. with a degree in english, extensive knowledge in technology and natural administrative flare, phina is the one who connects the dots and ensures that ideas and operations are efficiently executed.

as the youngest member, phina’s cheerful and positive attitude to life, brings a refreshing dynamic to the team whilst keeping us in touch with market trends.

ARIYANTO MANTANI (ARI)

operations manager

ari joined m&m in 2011. he has a degree in hotel management and studied at the sahid tourism academy in solo, central java where he is from. ari started his f&b career in 2004 as part of the pre-opening team at grand flora kemang jakarta in the banquet department. then in 2005 spent three years at banyantree bintan as the supervisor for both their signature fine dinning restaurants, saffron and mediteranian cove. In 2008, ari moved to bali where he worked at the hard rock hotel and banyan tree ungasan.

a dedicated team member with a calm manner and an eye for detail. ari always encourages the team to do ‘service with the heart and exceed customer expectation’. his motto is “never assume, always check and re-check!”.

Ni Made Sumarni (made)

hr manager

from maintaining staff files to seamlessly coordinating hr projects, made ensures that things run smoothly. her dedication extends from assisting in salary preparation to providing insightful orientations for new team members. with a keen eye for detail, made is the backbone of our hr department, contributing to a pleasant working environment for the entire team.

made is a great people's person who's compassionate, honorable and efficient nature keeps the company in good spirits. her great sense of humor also makes everybody feel comfortable and part of the family.

PUTU SUARDANA (PUTU)

accounting manager

putu graduated with a bachelor's degree in accounting from undiknas university and has been part of the m&m team since 1997. before joining the m&m family, putu worked at the mega bank jakarta as an accounting employee from 1993-1996. after the adventure at mega bank jakarta, putu joined waterbom as a senior accountant from 1996-1997. since 1997, we have been happy to have putu as an valuable asset within the m&m team.

Ni Komang Anta Ganiati (ANTA)

senior purchasing

before joining the m&m family, anta worked as an accounting employee at matahari bungalow and waterbom. since 2003, we have been pleased to have anta join the m&m team, working as senior purchaser. here, anta oversees day-to-day purchasing activities, maintains strategic relationships with suppliers and develops a strategic sourcing plan for the organization based on market trends and opportunities to reduce waste while maintaining service quality. anta's precision in every detail makes her a great asset to the team, turning every challenge into a masterpiece.
